Nutritious AND delicious: turkey meatloaf and sweet potatoes

And so it begins…This year I’m doing the NYC Tri on behalf of Camp Interactive. I’ve worked with them for a little over 4 years now, and I’ve witnessed, first hand, the difference this organization makes in the lives of young adults. They focus on two areas near and dear to me - technology and the great outdoors. Nothing I say does this organization justice, so rather than ramble on, I’ll simply extend an open invitation to check them out and tag along on any of their excursions. Carbo Loading - Part 1 : Paparedelle bolognese with pancetta and fresh basil.

Had a lot of time to cook this weekend:

  • chilled tomato gazpacho with parmasean croutons
  • baby back ribs with peach bbq sauce
  • whole wheat mac and cheese with gruyere, cheddar, and parmsean
  • herb roasted chicken with tomato lentil couscous

GTS GROUP RUN : WE RAN THE ENTIRE NYC TRI RUNNING COURSE AND THEN SOME. TOTAL RUN: 6.34 MILES. TOTAL TIME: 55 MINS. PACE: 8.24 MINUTES/MILE (INCLUDING BATHROOM PITSTOP, SO IT WAS ACTUALLY FASTER!)

IT’S THE FIRST TIME I’VE EVER RAN THE COMPLETE LOOP, NON-STOP. SO HAPPY RIGHT NOW.

* UPDATE: ESTHER USED HER GPS WATCH TO MAP OUR RUN. TURNS OUT WE RAN 6.54 MILES, WOOT!

From this weekend’s open water swim: sunglasses, goggles, tri shorts, swim cap, wet suit, gatorade, water bottle, running shoes, peanut butter sandwiches, CLIF bars, running shirt, flip flops, sun screen, ankle brace.

Lessons from the weekend: Fight all urges to swim fast. Open water is all about pacing. It would have served me much better to start slow and trust my stroke. Instead, I inhaled about 15 gulps of salt water within the first 5 mins. Live and learn.
